Also known as the bean herb (due to its ability to reduce the gaseous effect of legumes), pigweed, or Mexican tea, epazote is a popular herb in both Mexico and the Caribbean. Epazote is pungent, with a strong flavor that some swear by and some consider to be an acquired taste. Use dried or fresh, in beans, quesadillas, sopes (fried cornmeal cakes), scrambled eggs, or fish dishes.
Medicinally, epazote can be taken as a tea to expel intestinal worms and to soothe digestion. It is said to be poisonous if ingested in extremely large quantities, but as the taste is so intensely pungent, the likelihood of an epazote overdose does not seem likely, so do not be afraid to flavor your cooking at will.
