Seitan, otherwise known as “wheat-meat”, is so distinctly meatlike in consistency that some vegetarians avoid it simply because it gives them the willies. Seitan is made from high gluten flour that has been excessively kneaded and rinsed until the wheat starch has been removed, and then simmered, and flavored or marinated. Great in stir-fries, casseroles, stews, and Asian noodle dishes, seitan is less likely to fall apart than tofu and works well as a high-protein additive to many recipes.
