Red Clover Tea

           The familiar pink-purple flower heads of the wild clover produce a tea that is high in vitamin C and B, calcium, potassium, and magnesium. An excellent tonic, and a blood purifier, red clover has  a delicate taste; add a few peppermint leaves for a heartier flavor. Red clover tea is useful in the treatment of menopause, irregular menstrual cycles, and persistent coughs.
         

            Red clover tea is also said to be quieting to the nerves. Gathering your own red clover sounds like a nerve-quieting activity, too! Dry the flowers in a dark airy spot and store in covered jars for winter use. To brew, steep 2 tablespoons blossoms in 3 cups boiling water for 10-15 minutes. Strain and serve with honey or lemon if desired.

Pistachio Nut


            If you have never tasted an undyed pistachio nut, you have a treat awaiting: a plain tan pistachio with a green-skinned kernel, lightly roasted and salted – unsurpassable! These nuts are particularly high in iron, vitamin A, and protein, with sizable quantities of potassium, magnesium, phosphorus, and vitamin B. Pistachios grow on small trees that are native to Asia and the Middle East; they are now cultivated throughout the Mediterranean region and also in the southern United States. These nuts are most often found in Middle Eastern confections and in ice cream.
