Lotus Root Tea


            This sweet and mild tea may be made from either the fresh or dried root of the Asian lotus plant. In either case it is said to be very helpful for respiratory problems. Fresh, the root is grated and boiled in an equal amount of water with a pinch of salt; strain and serve. The dry root, which is usually powdered, is prepared by mixing 1 teaspoon of the powder with 2 cups water. Simmer and just before serving add a bit of grated ginger and tamari soy sauce.
