Made from creamed sesame seeds, this delicious spread is found in health food and Middle Eastern stores. It can be used alone as a sauce or spread, or mixed with miso, hummus, honey, peanut butter, or yogurt to make dips and sandwich fillings. See also Sesame seed.

SESAME TAHINI
1 cup sesame seeds, raw
1 tablespoon wheat germ, raw or toasted
6 tablespoons sesame oil (preferably pressed oil)
1/8 (one-eight) teaspoon salt
1. Grind sesame seeds and wheat germ to a powder in a blender. Place in a bowl and add the sesame oil and salt and mix well. It should have the consistency of peanut butter. Keep refrigerated in a covered jar.
2. Makes about one cup.
