Kefir


     Kefir is a delicious fermented milk. It is similar in taste to yogurt, and some people consider it more nutritious. It is certainly easier to make, for the milk does not have to be heated and the temperature does not have to be controlled. Kefir grains are available in health food stores, with instructions for making Kefir at home.

            Kefir has long been used in Eastern Europe, the Middle East, and parts of Asia. Persian women drank kefir to keep their complexions fresh and clear. It is said to be useful for inflammatory conditions of the stomach, intestinal tract, and liver. In the same way as yogurt, its friendly bacteria do away with unfriendly bacteria in the intestines. Kefir is helpful in curing both constipation and diarrhea; fresh kefir should be taken for constipation and kefir more than four days old will prove helpful with diarrhea.
