Pistachio Nut


            If you have never tasted an undyed pistachio nut, you have a treat awaiting: a plain tan pistachio with a green-skinned kernel, lightly roasted and salted – unsurpassable! These nuts are particularly high in iron, vitamin A, and protein, with sizable quantities of potassium, magnesium, phosphorus, and vitamin B. Pistachios grow on small trees that are native to Asia and the Middle East; they are now cultivated throughout the Mediterranean region and also in the southern United States. These nuts are most often found in Middle Eastern confections and in ice cream.
