Native to Japan, mochi is made from glutinous rice that has been steamed, mashed or pounded, and then flattened. Mochi is available prepackaged in the refrigerator section of most health food stores. When baked, it is transformed from a dense substance to a puffy, pastrylike form that is crisp on the outside and extremely chewy on the inside. Mochi is available both plain and sweetened and makes a great snack food for kids.
