Amazake



Enjoyed by the Japanese for hundreds of years, amazake is a naturally sweet drink made from koji (cultured rice). The koji is mixed with water and whole grain rice and incubated until the enzymes begin to break down the carbohydrates and natural sweetness develops.

          Amazake is rich in health benefits derived from the koji, including enzymes, B vitamins, niacin, thiamin, essential amino acids, and energy-providing glucose. The live enzymes in this dessertlike drink are said to strengthen the digestive system.
