These tiny seeds produce the tenderest and sweetest of sprouts (see sprouts for simple growing instructions). Alfalfa sprouts are a perfect addition to sandwiches, for they will not go limp after a few hours like lettuce. Add them to salads or put a bowl of them on the table-you may find your children eating them by the handful, for they make an intriguing crunchy snack.
The seeds can be used, unsprouted, for tea- 1 teaspoon seeds to 2 cups boiling water. The mild-tasting brew is said to be beneficial in cases of arthritis. See also alfalfa.
