Ajowan


 


          Native to India, ajowan seeds, which are similar in appearance to celery seeds, have a pungent, thymelike flavor and scent. Commonly used in Indian lentil dishes and bread, ajowan should be used sparingly, as its flavor is strong.

          When smoked, the seeds are said to relieve asthma. Essential oil of ajowan is used as an antiseptic and carminative.
