Sesame Tahini (with recipe)


    Made from creamed sesame seeds, this delicious spread is found in health food and Middle Eastern stores. It can be used alone as a sauce or spread, or mixed with miso, hummus, honey, peanut butter, or yogurt to make dips and sandwich fillings. See also Sesame seed.

SESAME TAHINI

1 cup sesame seeds, raw
1 tablespoon wheat germ, raw or toasted
6 tablespoons sesame oil (preferably pressed oil)
1/8 (one-eight) teaspoon salt

1. Grind sesame seeds and wheat germ to a powder in a blender. Place in a bowl and add the sesame oil and salt and mix well. It should have the consistency of peanut butter. Keep refrigerated in a covered jar.
2. Makes about one cup.

Sesame Seed Oil


    The oil pressed from the sesame seed is light, mild, and healthfully unsaturated. It is fine for salads as well as cooking and is widely used in Indian cuisine. Sesame oil is also used in making soaps, shampoos, and skin lotions.
