Baking powder is used as a leavening agent in cookies and quick breads. Made up of an acid, a base, and a filler – for instance, baking soda, cream of tartar, and cornstarch – baking powder releases carbon dioxide bubbles that cause batter or dough to rise. Baking powder can be a dangerous product. Most commercial brands contain aluminum compounds, which should not be used for human consumption. Less objectionable, but nevertheless harmful for many people, is the high sodium content of many baking powders. So if you want to use this product, check your labels carefully. Health food stores generally carry low-sodium, aluminum-free brands of baking powder.
