This is a cultured milk into which acidophilus bacteria have been introduced. It is not a very stable product and must be used within a couple of days of the making. Therefore, it is rarely sold commercially. Acidophilus milk aids the growth of healthful intestinal flora and at the same time inhibits the growth of unfriendly bacteria – in much the same manner as yogurt, except that the acidophilus is far stronger (and, incidentally, not so appetizing).
In health food stores you will find liquid acidophilus culture and acidophilus food powder. The liquid culture is taken by the teaspoonful or mixed with water or juice. Acidophilus “food” may be taken in conjunction with the culture and feeds the acidophilus bacteria, making them work more ambitiously. The culture is also available in pill form.
